Ingredients
1 lb short pasta noodles, boiled and chilled
1/2 cup extra virgin olive oil
2 Tbs red wine vinegar
1/2 tsp salt
1/2 tsp black pepper
1/4 lb fresh mozzarella, cubed
1/2 cup snow peas, halved
1/2 cup sun-dried tomatoes, thinly sliced
1/2 cup artichoke hearts, quartered
1/4 cup kalamata olives, pitted and halved
1/4 cup fresh basil leaves, thinly sliced
1/4 cup Fisher® Pine Nuts
Directions
  1. Place pasta in a large mixing bowl. Toss with olive oil, vinegar, salt and pepper. Add mozzarella, peas, tomatoes, artichoke hearts, olives, basil and pine nuts. 
  2. Carefully toss with tongs to evenly distribute the ingredients. Refrigerate salad for at least 1 hour before serving.
